Yabba - Communal sharing of family
'yabba' brings a spirit of togetherness and sharing.
Yabba is a bowl used in baking still used in some Jamaican
homes used at Easter and Christmas.
Pepperpot Soup
1 tin Callaloo (1 & 1/2 pack fresh spinach or bunch
callaloo)
4 okras
2 medium potatoes
500 ml water or vegetable stock
125 ml Coconut milk
1 Green pepper, chopped
1 Clove garlic, 1 sprig fresh thyme, 2 stalks escallion
Add a dash of Walkerswood Scotch Bonnet Pepper Sauce
for more flavor.
(optional) salt and pepper to taste
Boil stock and add potatoes, garlic, escallion, thyme
and okras. Simmer for 10 minutes then add Callaloo (spinach)
and green pepper. Remove from pot and puree in a blender
or food processor. return to saucepan and add coconut
milk, salt and pepper to taste. Reheat and serve with
bread. Shrimp or beef can be added if desired. Serves

Festival
1 egg 1/2 cup cornmeal
1 cup flour salt to taste 1 tablespoon sugar
2 teaspoon baking powder
water
oil for frying
Mix dry ingredients together. Add liquid to make a
soft dough. Divide into 5 x 3 inch flat shape in long
dumplings. Fry in 1 inch deep oil until rich golden
crusted brown all round. Drain and serve hot. Great
with Jerk Chicken and Escoveitch Fish.
