Spices and Seasonings commonly used in the
Caribbean, include thyme, escallion, garlic, hot
peppers, allspice(pimento), ginger, nutmeg &
mace, annatto, and peppercorn. Other flavors may
come from tamarind, coconut, lime, guava, molasses,
and cane vinegar, papayas and bananas. The usual
accompaniment for some of the traditional dishes
include pumpkin, boiled green bananas, string beans,
okra, rice and peas, fried or boiled dumpling, potatoes
